Giardiniera style Vegetable Hash Recipe

SeedFork Farm to Fork Dinner Vegetable Hash Recipe

Part of our main course at our 2018 Farm to Fork Dinner was colorful and delicious “Giardiniera,” or vegetable hash. This is such a wonderful summer and early fall dish to prepare, and can be served with so many different entrees! Giardiniera is traditionally an Italian relish of pickled vegetables in vinegar or oil, but for our Farm To Fork Dinner we used a variety of seasonal vegetables and only pickled it for a short time.

Ingredients

 

-6 ears corn

-1 Red Bell Pepper, diced

-1 Green Bell Pepper, diced

-1-2 Jalapeños, diced

-1 Large Sweet Potato, diced

1 Red Onion, diced

-1/4 Cup Chopped Cilantro

-1/2-1 Cup Edamame

-1 Diced Avocado (if desired)

-2 Cups Cherry Tomatoes, diced

-4 Tbs Olive Oil

-1/2 Cup Feta Cheese

-Garlic

-Juice of one Lemon

 
 

•Boil Sweet Potatoes 15-30 minutes until tender and drain.

•Rub Corn with oil, salt & pepper, and grill. Cut corn off cob once cooked.

•Dice remaining vegetables, and toss together with oil, feta, garlic, and lemon juice. Salt & pepper to taste.

•Refrigerate for a 1-3 hours and serve warm or cold.
